you have made. Wrap
airtight in plastic (you can
also mark the lines on the
plastic) and place the
dough in the refrigerator
for 1 to 2 hours. This is
necessary for the dough
and butter to cool and for
the gluten to relax, as it
has been activated by the
rolling.
