Ganache can be used as
soon as it’s made or it can
be tightly covered and
refrigerated for up to 1
week, or frozen for up to 1
month. Lay a sheet of
plastic wrap directly on
top of the ganache, then
cover the bowl with
another sheet. The best
way to use it after it has
been refrigerated is to let
it sit on the counter for 3
