CORIANDER MUSTARD SEED RUB
Time in the Kitchen: 10 minutes
Servings: Enough to season at least 2 pounds of protein
2 tablespoons coriander seeds
1 tablespoon cumin seeds
1 teaspoon mustard seeds
1 teaspoon green cardamom pods
1 teaspoon nutmeg
The flavor and aroma of coriander has a hint of lemon that blends in well with the stronger flavors and powerful aromatics of spices like cardamom
and cumin. Try this rub with lamb or beef that is slowly cooked to tenderness.
In a skillet over medium heat, toast coriander, cumin, mustard, and cardamom for about 3 minutes. The spices will become more fragrant and
slightly darker as they toast and some of the seeds might make popping noises.
Cool, then finely grind with remaining ingredients in a coffee grinder or with a mortar and pestle.
