especially true for products from Indian
grocery stores, and especially for black
lentils, which mix in seamlessly with
small pieces of dark stones. The best
way to clean them is to put about a cup
of the product on the edge of a white
plate farthest away from you. Slowly
bring small amounts of the product
toward you, picking out any foreign
matter along the way. Enlist your kids
for this task. Mine will drop everything
to come and clean beans and lentils—go
figure!
- STORING YOUR LEGUMES
WITHOUT WASHING. Never, ever
store beans or lentils damp or wet. They
can easily become moldy and spoil.
