Sandy Point Spinach Sauté


Preparing spinach with a quick sauté enhances its flavor
while maintaining its superlative nutritional benefits.
Spinach is a great source of iron, and you can quadruple its
absorption by combining it with a food high in vitamin C,
like red bell peppers. SERVES 4


2 bunches spinach
2 tablespoons extra virgin olive oil
4 garlic cloves, diced
1 tablespoon fresh basil, minced
1 tablespoon minced fresh cilantro
1 small red bell pepper, sliced into matchsticks
1 lemon, cut in half

Wash and drain spinach using a salad spinner.


Heat oil in a cast iron skillet over medium flame. Stir in
garlic for one minute. Toss in the spinach, basil, and
cilantro and mix thoroughly for two minutes. Remove from
heat. Top with pepper slices.
