3½ pounds tomatoes, sliced
2 medium onions, sliced
1 very small garlic clove
½ bay leaf
½ red bell pepper
¼ cup unsweetened fruit juice (white grape, pear, or
apple)
1 teaspoon whole allspice
1 teaspoon whole cloves
1 teaspoon whole mace
1 teaspoon celery seeds
1 teaspoon black peppercorns
1 ½-inch cinnamon stick
½ cup freshly squeezed lemon juice
