T Honey, Almonds, and


Oats Breakfast Bar


Quick, easy, and delicious, this breakfast bar will quickly become a family favorite. Why
spend a lot of money on premade cereal bars when these can made for less? The bars
can be made ahead of time and stored in an airtight container for a week. If you’re out
running errands or traveling, they’re a good food to wrap up and take with you because
they don’t need refrigeration and can pass through airport security.
Stage: Regular foods

Preparation time: 5 minutes
Cooking time: 3 minutes

Yield: 8 servings (Two 2-square-inch bars each)

1 1 ⁄ 3 cups Wheat Chex or Shreddies cereal,
broken into smaller pieces

(^2) ⁄ 3 cup crispy brown rice cereal
(^2) ⁄ 3 cup sliced almonds
(^1) ⁄ 3 cup instant whole oats
(^1) ⁄ 3 cup honey
(^1) ⁄ 2 cup all-natural creamy peanut butter
(^1) ⁄ 4 teaspoon liquid butter extract
1 In a large bowl, toss together the cereals, almonds, and oats. Grease an 8-x-8-inch dish
with nonstick cooking spray. Set both aside.
2 In a medium saucepan over medium heat, stir together the honey and peanut butter.
Cook mixture until it’s heated through but not simmering, about 1^1 ⁄ 2 minutes, stirring
constantly to keep it from burning to the bottom of the pan.
3 Remove from heat and quickly stir in butter extract. Pour the mixture into the bowl
with the cereals and mix well.
4 Press into the prepared pan. Let cool until set. Cut into bars and serve.
