1 pound boneless, skinless chicken breasts
cut into 4-ounce portions
1 pound skinless chicken thighs cut into
4-ounce portions

(^1) ⁄ 4 cup fresh lime juice
(^1) ⁄ 4 cup fresh lemon juice
3 cloves garlic, minced (see Figure 9-1)
1 tablespoon chopped fresh oregano
1 tablespoon olive oil
1 Place the chicken in a large resealable bag and pour the remaining ingredients over the
top. Let it marinate in the refrigerator for at least 8 hours or up to 24 hours.
2 Preheat the oven to 350 degrees.
3 Place the chicken in a roasting pan and pour marinade over chicken. Roast for
45 minutes or until internal temperature is 165 degrees.
