ome people may choose to eat vegetarian
after weight loss surgery because they have
difficulty tolerating meat. Sometimes this difficulty
lessens as time goes on, but for some people,
intolerance is long term. Whatever your reason
for eating vegetarian, you can still meet your
protein goals and enjoy delicious food. This
chapter provides you with some tasty meatless
recipes that are sure to please even the most
devoted carnivore.

If you omit high-protein animal foods on a regular basis, you have to do some
careful planning to make sure you meet your protein goals. Taking your vita-
min and mineral supplements after surgery is always critical, but if you regu-
larly eat vegetarian, you may need extra. To monitor your health, be sure to
keep all your follow-up appointments and get your lab work done as ordered
by your surgeon.

Developing Delicious Dinner Salads


A dinner salad can be so much more than lettuce and tomatoes. It can be part
of dinner, or it can be satisfying enough to be dinner itself. You can save prep
time by shopping in the produce department for packaged veggies that are
cleaned, cut, and ready to go. They may cost more, but your time is valuable,
too. Plus there is no waste because you can buy smaller quantities.
