262 Part III: Simple Recipes to Enjoy Anytime
Southern-Style Green Beans
Bacon and green beans are best friends in the Southern United States. Just a little bit of
bacon goes a long way in adding flavor. Add in a little garlic and dill, and you’ll never
want green beans any other way. Fresh green beans are available all year but are at
their best in the summer. Southern green beans are meant to be soft and cooked longer.
This gives the green beans a chance absorb more flavor.

T Cucumber Cheese Salad
With fresh cucumbers and diced Monterey Jack cheese, this salad is the best. Marinating
with onion, pepper, white wine vinegar, Dijon mustard, and Worcestershire sauce kicks
up a traditional cucumber salad a few notches. (Betcha didn’t know that 96 percent of
the weight of a cucumber comes from the water content.)
