Sweet-Pea Salad


The sharpness of the cheese and smoky flavor of the turkey bacon make this sweet-pea
salad a perfect accompaniment for meals with poultry, pork, and beef. This can be
made the day before and even tastes better the next day. Turkey bacon is a good alter-
native for people who do not eat pork.

Stage: Regular foods
Preparation time: 15 minutes

Chilling time: 2 hours
Yield: 8 servings (^1 ⁄ 2 cup each)

3 cups frozen sweet green peas, thawed
2 slices turkey bacon, cooked crisp and chopped

(^1) ⁄ 4 cup shredded low-fat cheddar cheese
1 tablespoon canola oil
(^1) ⁄ 4 cup finely chopped onion
2 plum tomatoes, chopped
2 cloves garlic, minced
(^1) ⁄ 2 cup chopped red bell pepper
(^1) ⁄ 4 cup finely chopped fresh parsley
2 tablespoons lemon juice
(^1) ⁄ 2 teaspoon salt
(^1) ⁄ 4 teaspoon pepper
Place all ingredients into a large bowl and mix well. Refrigerate for 2 to 3 hours before
serving.

Edamame, soy beans, are a high-quality protein and a good source of fiber. They are
also one of the few plant sources that contain omega-3 fatty acids.

8 ounces frozen shelled edamame
11 ⁄ 2 cups frozen petite corn kernels
(^1) ⁄ 2 red bell pepper, chopped
(^1) ⁄ 2 cup sliced green onion
(^1) ⁄ 4 cup finely chopped red onion
(^1) ⁄ 4 cup chopped fresh flat-leaf parsley
1 tablespoon chopped fresh oregano or basil
