Chapter 20
Super Simple Cooking
for One... or Two
In This Chapter
▶ Dishing up a single serving
▶ Cooking small portions for two
P
eople who have had weight loss surgery
often ask us how to cook for one or two.
Making small meals is a challenge. Your portions
are a lot smaller, so traditional recipes servings
are way more than you need or can eat. Even
if you don’t want to be a short order cook and
prepare more than one meal, sometimes you just
can’t eat what the rest of the family is eating. If
you live alone you don’t want to spend a lot of
time in the kitchen and eat the same leftover meal
for the next week.
Food at the supermarket isn’t usually packaged for one or two people. If you
go to the fresh meat and seafood counter where the food is in cases, you
can ask for just the amount you need. If the meat, fish, or poultry is already
packaged, you can ask the butcher to break down the package to the size
you need. The same goes for the produce department. You don’t need to buy
bags of apples, oranges, or potatoes. Buy just what you need for less waste.
Yes, it’s usually a little more expensive to buy smaller quantities, but if you
don’t have to throw out spoiled food you couldn’t eat in time, you may
actually save money.
We’re here to help you more with your small meals dilemma. In this chapter
we provide you with plenty of quick and delicious recipes that are meant to
be enjoyed by one or two people. If you do happen to want leftovers or have
a few additional mouths to feed, you can always double or triple the recipes
to suit your needs. Enjoy!
