THE GREAT AUSTRALIANCHRISTMAS PUDDINGPREP + COOK TIME 5 0 MINUTES(+ STANDING & FREEZING) SERVES 81 cup(240g) mixed glacé fruit¼ cup (60g) glacé cherries¼ cup (40g) sultanas¼ cup (60ml) brandy4 large eggs, separated½ cup (80g) icing sugar¼ cup (25g) cocoa powder60g dark chocolate, choppedâ
cup (45g) roasted hazelnuts,chopped coarsely45g chocolate honeycomb bar,chopped coarsely2 teaspoons powdered gelatine1 tablespoon hot water1 cup (250ml) pouring cream180g white chocolate¼ cup (35g) hazelnuts, extra,chopped coarsely1 Place mixed glacé fruit into a foodprocessor fitted with a metal blade.Process for3 seconds. Add glacécherries. Process for 2 seconds.Place fruit mixture in a medium bowl(fruit chunks should not be too largeor they will tear the pudding whencutting). Add sultanas. Stir inbrandy. Cover, then place in a cool,dark place overnight.2 Line a 2âlitre (8âcup) puddingsteamer with plastic wrap, smoothingthe wrap to remove as many wrinklesas possible.3 Place dark chocolate in a mediumheatproof bowl over a mediumsaucepan of simmering water (donâtlet water touch the base of the bowl).Stir until smooth. Cool for 5 minutes.4 Beat egg whites in a large bowlwith an electric mixer until firm peaksform. Gradually beat in combinedsifted icing sugar and cocoa. Graduallybeat in lightly beaten egg yolks.5 Stir melted chocolate into eggmixture. Pour chocolate mixtureover fruit. Mix well. Stir in thenuts and honeycomb.``````6 Sprinkle gelatine over the hotwater in a small heatproof jug. Standjug in a small saucepan of simmeringwater. Stir until gelatine dissolves.Cool slightly. Stir gelatine intochocolate mixture.7 Beatcreaminasmallbowlwith electric mixer until firm peaksform. Fold cream into chocolatemixture. Pour mixture into puddingsteamer. Smooth surface. Cover,then freeze overnight.8 Invert pudding onto a chilledserving plate. Remove steamerand peel away the plastic wrap.Return to the freezer.9 Place white chocolate in amedium heatproof bowl overa medium saucepan of simmeringwater (donât let the water touch thebase of the bowl). Stir until smooth.Cool for 5 minutes, then spoonchocolate gently over top ofpudding. Return pudding tofreezer immediately to allowchocolate to set. Servetopped with extra hazelnuts.
