FRUITY GIN SPRITZERPREP TIME 10 MINUTES MAKES 2 LITRES (8 CUPS)SERVES 81 cup chilled dry gin½ cup chilled freshly squeezed orange juice1.25 litres (5 cups) chilled bloodorange−flavoured mineral water½ cup passionfruit pulp½ teaspoon orange blossom water3 large yellow peaches, sliced3 plums, sliced1 Place the gin, orange juice, mineral water,passionfruit pulp and orange blossom waterin a large jug. Stir to combine.2 Add peach and plum. Stir to combine.Serve chilled over crushed ice.WATERMELON STINGERPREP + COOK TIME 30 MINUTES (+ STANDING & REFRIGERATION)MAKES2 LITRES (8 CUPS) SERVES 8``````2 bruised fresh small red chillies, halved1 fresh long red chilli, seeded1¼ cups chilled vodka¾ cup caster sugar2 cups water1 tablespoon finely grated lime rind1kg seedless watermelon, chopped coarsely1 cup chilled soda water``````1 Place halved small red chillies and seeded chilli invodka for at least24 hours toinfuse. Discard chillies.2 Stir caster sugar and the water in a medium saucepanover high heat until sugar dissolves. Bring to the boil.Boil, uncovered, without stirring, for 15 minutes or untilreduced by half.3 Stir in lime rind. Refrigerate syrup until cold.4 Blend or process watermelon, in two batches,until smooth. Strain watermelon juice into a large jug.Stir in sugar syrup, chilli−infused vodka and chilledsoda water.
