2 handfuls green beans, ends snipped
1 tablespoon avocado oil
1 tablespoon fresh lemon juice
2 tablespoons chopped fresh parsley
Salt to taste- Rinse the fish, pat dry, and place in a glass baking dish, skin side up.
- Pour the sauce over the salmon, and marinate in the refrigerator for
1 hour.- Preheat the oven to 400°F.
- Bake the salmon, covered with aluminum foil, for 10 minutes, then
turn skin side down and bake for approximately 10 more minutes de-
pending on the thickness of the fish.- Fill a large saucepan one-half full with water and bring to a boil, add
the green beans, reduce to a simmer for 7 minutes.- Drain the beans and toss with avocado oil, lemon juice, parsley, and

- Broil the sausages for 5 minutes on each side, blot excess oil with pa-
per towels, and place on plates.- Top with poached eggs, sprinkle with salt and cayenne, and serve.
