- Mix the flax dressing in a blender.
- Place the eggs in a small saucepan, cover with cold water, and bring
to a boil. Turn down to simmer for 5 minutes.
- Fill a large saucepan one-third full with water and bring to a boil.
Add the chard and turn down to simmer for 5 minutes. Cool the eggs
in cold water, peel, and slice in^1 ⁄ 4 -inch rounds.
- Drain the chard and split between two plates.
- Arrange the sliced eggs on top of the chard, and drizzle with dress-
ing.

SERVES 2
1 can chunk white tuna packed in water, drained
(^1) ⁄ 4 cup chopped cashews
2 tablespoons chopped celery
2 tablespoons homemade mayonnaise
1 tablespoon chopped scallions
Pinch of cayenne
Salt to taste
“Manna from Heaven” Bread (see “Product Information,” page 291), thinly sliced and
toasted
- Mix the tuna, cashews, celery, mayonnaise, scallions, cayenne, and
salt well with a fork.
- Serve over toasted Manna bread.
