  1. Mix the flax dressing in a blender.

  2. Place the eggs in a small saucepan, cover with cold water, and bring


to a boil. Turn down to simmer for 5 minutes.


  1. Fill a large saucepan one-third full with water and bring to a boil.


Add the chard and turn down to simmer for 5 minutes. Cool the eggs
in cold water, peel, and slice in^1 ⁄ 4 -inch rounds.


  1. Drain the chard and split between two plates.

  2. Arrange the sliced eggs on top of the chard, and drizzle with dress-


ing.

SERVES 2
1 can chunk white tuna packed in water, drained
(^1) ⁄ 4 cup chopped cashews
2 tablespoons chopped celery
2 tablespoons homemade mayonnaise
1 tablespoon chopped scallions
Pinch of cayenne
Salt to taste
“Manna from Heaven” Bread (see “Product Information,” page 291), thinly sliced and
toasted



  1. Mix the tuna, cashews, celery, mayonnaise, scallions, cayenne, and


salt well with a fork.


  1. Serve over toasted Manna bread.
