OMELETTE AUX MOULES
Prepare a mixture of onion
lightly browned in olive oil,
flavoured with garlic, parsley, and
a little white wine.
Add the cooked shelled mussels
to this, and at the appropriate
moment add them to your
omelette, which is served with a
little tomato sauce in addition.
