When they are cooked bind the
sauce with the yolk of an egg.
COURGETTES AUX TOMATES
Slice the courgettes (very young
marrows), peeling them only if
they are large or blemished. Salt
them and leave to stand for 30
minutes. Put them in a fireproof
dish with plenty of butter and 2
sliced and peeled tomatoes. Cook
for about 10 minutes on a very low
flame.
