available from whole food stores. Make small amounts regularly
rather than one big batch.

175g organic white flour (also try buckwheat)
50g hemp seeds, ground or whole
50g hemp butter or non-hydrogenated margarine
50g ghee
The basic rule for pastry is that you need half fat to flour, but you
can vary the type of flour or fat. There are many to choose from.
Sieve the flour and hemp seeds into a mixing bowl. Add butter/
margarine and ghee. Rub in with your finger-tips. Keep the mixture
cool for a lighter pastry. When all the fat is well rubbed into the
flour, slowly add cold water until the pastry comes together in a
ball. You can use your hand to knead the water in, but the idea is
to get the mixture to the point just before it becomes sticky. If you
add too much water, don't panic, just sprinkle a bit more flour in.
Now the mixture is ready for rolling out into whatever size you
desire for pies, pasties and sausage rolls, sweet or savoury.
