1 tsp paprika
1 1/2 tsp turmeric
3 tbsp ice cold water
Mix flours together with the paprika, turmeric and a pinch of salt.
Rub in the fat so the mixture resembles breadcrumbs. Slowly add
cold water until it becomes a firm dough. Place in the fridge for at
least one hour. Roll out on a lightly floured surface and cut into 4"
circles. Roll each circle into a 4" x 8" oval ready for the mix.
The Mix:
2 onions, finely chopped
2 fresh chillis
1/2 thumb of fresh grated ginger or 2 1/2 tsp ground ginger
1 clove garlic
Pepper, fresh coriander or coconut (optional)
Vegetables for two (recommended potatoes, cut into 1cm cubes,
or sweet potatoes, carrots, sweetcorn, parsnip)
Olive oil for frying
Fry the onions and chilli for one minute, add the garlic, then the
ginger. Fry for one more minute before adding vegetable cubes
and sweetcorn. Just before cooked add optional coriander,
