36.4.2 Strategies
Anyoverall policyto ensureclean surfaces (see Fig.36.9)should include
monitoringsurfacecleanliness. Whenand whereto sample needsto be con-
sideredin relation to risk and the potentialfor cross-contamination. It is unfor-
tunatethat in some companies, samplingconcentrateson the centreof largeflat
surfaces, whichare morelikelyto be wellcleaned.Lessattention maybe given
to handcontact surfaces or cracksand crevices wheresoil and latermicro-
organismscan accumulate. Rinses, especially in CIP, in liquidprocessing plants
