THE GREAT PUMPKIN BREAD

1½ CUPS WHOLE WHEAT FLOUR
3/4 CUP GROUND FLAXSEED
1 TEASPOON BAKING SODA
½ TEASPOON BAKING POWDER
½ TEASPOONSALT
½ TEASPOON GROUND NUTMEG
½ TEASPOON GROUND ALLSPICE
½ TEASPOON GROUND CINNAMON
¼ TEASPOON GROUND CLOVES
8 OUNCES CANNED UNSWEETENED PUMPKIN
½ CUP GRANULATED SUGAR
½ CUP PACKED BROWN SUGAR
½ CUP UNSWEETENED APPLESAUCE
1 EGG
1 EGG WHITE
1/3 CUP FAT-FREE MILK
½ CUP DRIED CRANBERRIES

1. Preheat the oven to 350°F. Coat a 9-by-5-inch loaf pan with cooking spray.


2. Mix the flour, flaxseed, baking soda, baking powder, salt, and spices in a large bowl. Whisk the


pumpkin, sugars, applesauce, eggs, and milk in a medium bowl. Pour over the dry ingredients and
gently stir together. Fold in the cranberries. Pour into the loaf pan.


3. Bake about 40 minutes, until a toothpick inserted in the center comes out clean. Let stand on a wire


rack for 15 minutes. Turn out of the pan and cool completely.


Makes 8 slices.
