FIG AND PROSCIUTTO TORTILLA BITES
A sweet and savory appetizer that'll impress your guest(s).

1 16-OUNCE PACKAGE FIGS, STEMMED, HALVED
4 6-INCH WHOLE GRAIN TORTILLAS
¼ POUND PROSCIUTTO HAM
4 OUNCES GORGONZOLA CHEESE
1. Place the figs in a saucepan filled with 1 cup of water over medium heat; cover. Simmer for 5
minutes, then remove from the heat. Preheat an oven to 350°F.
2. After the figs have cooled (about 10 minutes), puree in a blender for 2 minutes. Coat a skillet with
nonstick spray. Toast one tortilla at a time over medium-high heat.
3. Spread 2 tablespoons of the pureed figs over the toasted tortillas. Top each with 2 slices of
prosciutto and 1½ tablespoons gorgonzola. Place the tortillas on a baking sheet and bake on the center
rack for 10 minutes or until the cheese melts and the prosciutto becomes crisp. Cut into wedges.
Makes 8 servings (half a “pizza” each).
