2 LARGE SWEET POTATOES


½ HEAD CAULIFLOWER


3/4 CUP LOW-SODIUM CHICKEN BROTH


3 TABLESPOONS FAT-FREE SOUR CREAM


1 CLOVE GARLIC, MINCED


½ TEASPOON GRATED NUTMEG


1 SCALLION, MINCED


SALT AND PEPPER


1. Peel and cube the sweet potatoes; cut the cauliflower into florets. Place the cut vegetables in a


steaming basket over 1-inch of water in a medium saucepan. Steam for about 10 minutes until tender.


2. Transfer to a large bowl and mash, adding the broth. Stir in the sour cream, garlic, nutmeg, and


scallion. Season with salt and pepper.


Makes 4 servings.

How to Mince Garlic



  1. After peeling the clove, place it on a cutting board and trim off the tough roots (figure a). 2.
    Slice the garlic in thin strips along its length, from root to tip (figure b). 3.Turn the garlic 90
    degrees and cut strips in the other direction. Sprinkle the sticks of garlic with a pinch of salt to
    keep them from sticking to your knife. 4. Hold the garlic in place by curling your fingers under
    and run the knife back and forth over the sticks to mince as finely as you like (figure c).
