HOLY MACKEREL, THAT'S GOOD!
Serve with brown rice and steamed broccoli to elevate this meal to 4 Powerfoods.
½ TEASPOON GRATED LEMON ZEST
1½ TABLESPOONS LEMON JUICE
1/3 CUP + 2 TABLESPOONS
EXTRA-VIRGIN OLIVE OIL
2 TABLESPOONS CHOPPED
THYME LEAVES
SALT AND PEPPER
4 WHOLE MACKEREL
(ABOUT 1 POUND EACH)
3 LEMONS SLICED INTO 24 THIN SLICES
1. Mix the lemon zest and juice in a small bowl. Whisk in 1/3 cup oil. Add thyme and season with
salt and pepper.
2. Use a sharp knife to cut shallow diagonal slits spaced 2 inches apart into both sides of each fish.
Brush the fish with 2 tablespoons oil and sprinkle with salt and pepper. Sprinkle the cavities with salt
and pepper and place 2 thin lemon slices in each. Place 2 lemon slices on each side of each fish and
hold in place using kitchen string.
3. Grill over medium-high heat for about 5 minutes per side or until the fish is cooked through. Move
the fish to a large platter, snip off the string if it hasn't burned off, and drizzle with the lemon
vinaigrette.
