LEMONY LAMB LOLLIPOPS

1 CUP LOW-FAT PLAIN YOGURT
1 TABLESPOON LEMON JUICE
1/8 TEASPOONSWEET OR HOT PAPRIKA
1/8 TEASPOON GROUND CUMIN
8 RIB LAMB CHOPS
1½ TEASPOONS SALT
½ TEASPOON BLACK PEPPER
MINT SPRIGS (OPTIONAL)
1. Mix the yogurt, lemon juice, paprika, and cumin in a bowl and refrigerate until needed.
2. Sprinkle both sides of the lamb chops with salt and pepper. Grill over medium heat for 5 minutes
per side or until cooked through. Serve with the yogurt sauce.
