6 cups cooked black beans
1 red bell pepper, seeded and diced
1 green bell pepper, seeded and diced
½ large onion, diced
1 tablespoon minced fresh garlic
2 teaspoons cumin
1 tablespoon extra - virgin olive oil
2 tablespoons chopped fresh cilantro
1 ½ cups panko bread crumbs

Divide the beans into two equal portions and puree 3 cups of
them.
In a hot skillet, saut é the peppers, onion, garlic, and 1 teaspoon
cumin in olive oil.
In a large bowl, mix the whole beans, saut é ed vegetables, pureed
beans, remaining cumin, and cilantro. Add the panko bread crumbs
and form the mixture into patties. Then cook the burgers, either pan
fry over medium - high heat or bake in a preheated oven at 400 degrees F.
Cook the patties about 10 minutes per side, turning when the desired
texture is achieved.

Fresh Salsa
½ red onion
½ red bell pepper
½ green bell pepper
1 tomato
1 teaspoon minced fresh garlic
1 tablespoon fresh cilantro
1 tablespoon lemon juice
Juice of 1 lime
1 tablespoon honey
1 tablespoon extra - virgin olive oil
Lettuce

Puree all of the ingredients except the lettuce in a food processor
or a blender to the desired consistency. Top the burger with salsa
and place it on a bed of lettuce.
