Cut and prepare the bok choy, tomatoes and fish and
place to the sideHeat a pot on medium to high heat and drizzle extra
virgin olive oil into the panAdd diced onion when the pan is hot and cook
until softAdd the garlic, ginger and curry powder to the pot to
cook until fragrantPour in lite coconut cream and water and leave to
simmer for 10 minsAdd chopped fish, bok choy and diced tomatoes and
stir to combinePlace a lid on the pot. Reduce heat and simmer
for 5 minsFinish and serve with a squeeze of lemon01
