Chicken Mixture
Prepare a large frying pan and turn
the heat to highDrizzle the pan with extra virgin
olive oilAdd the chicken thighs and allow to
cook until golden brownAdd in mushrooms, red capsicum and
bacon and cook until mushrooms
are softAdd in rosemary and fish sauce, black
pitted olives and reduce the heat to
low and simmer for 5 minsPasta
Fill a large sized pot with water,
season with salt and bring to a boilPlace the fettuccine into the water
and allow it to cook for 7 mins or
until softChicken Mixture
Increase the heat to medium, add
garlic, chilli, Chinese cooking wine,
diced tomato and basil leaves into
the panCook through for 5-8 minsDrain the water from the pasta and
add the cooked pasta to the panStir to combine all ingredients, top
with parmesan cheese, garnish with
basil and enjoy
