Ingredients

PASIFIKA PLATE

· 7 potatoes (peel and

chop into small chunks)

· 5 eggs

· 1 packet frozen

vegetable mix (250g)

· 1 can beetroot (diced)

· 4 tbsp lite mayonnaise

· 1 whole lettuce

· 1 orange

Method

Bring a medium sized pot of water to the boil and then

add chopped potatoes

Prepare a separate pot of water, bring it to the boil,

then place eggs in for 8 mins

In a separate bowl, place the frozen mixed veggies into

microwave for 1-2 mins

Strain the water from all components (potatoes, eggs

and mixed veggies)

Peel the eggs then place to the side

In a medium sized bowl, add the potatoes, mixed

veggies, desired amount of beetroot and stir to

combine

Add lite mayo to dress the salad and stir to combine

On a large serving plate, wash and place lettuce leaves

to cover the surface

Pour prepared mixture onto the lettuce and top with

mayonnaise

Grate eggs over surface of mixture and cut 1 egg into

quarters, placing it in the middle

To complete the dish, slice oranges and place around

border of the mixture
