Makes 1 (10½-inch)

FOR THE TEA JELLY
4 Earl Grey tea bags
2 tablespoons
unsweetened
powdered gelatin
¼ cup sugar
FOR THE PANNA COTTA
2 tablespoons
unsweetened
powdered gelatin
2 cups all-
purpose cream
1½ cups milk
¼ cup orange-

¼ cup regular
unsweetened
cocoa powder
½ cup sugar
zest from 1 orange
1 Make the tea jelly: Heat
4 cups water in a medium
saucepan until just about
to boil. Add Earl Grey tea
bags and steep for 3 to

bags, then add gelatin and

2 Pour mixture into an

3 Make the panna cotta:
Heat 1 cup water in a
medium saucepan until
just about to boil. Stir in

Lower heat to simmer,

zest. Pour into a large
heatproof bowl and allow
to cool until cool to the
touch, about 30 minutes
to 1 hour.
4 Cut tea jelly into ½-inch
