We fired it up with propane and it worked
well, but when we added wood kindling
over the burner, as the folks from Bertello
suggested, it got even better. Using
propane helped keep the heat consistent,
and adding the wood on top kept flames
covering the roof of the oven. This
provided a lot of heat radiating down to
cook the top of the pizza, giving the crust

ovens, Ooni and its design are often
mimicked. Its newest model is capable of
making 16-inch pizzas fired with either
propane or wood. The new locking door
with a glass window is a welcome addition,
as is a digital thermometer to monitor the
air temperature in the oven. While using
propane was super easy, we appreciated
the large firebox for wood that provided a
lot more flame across the top of the oven.MOST ATTRACTIVE

burner, integrated thermometer, pizza peelAlthough the Roccbox is a different shape
than the other ovens, it still functions
the same. Our sample didn’t come with
the optional wood burner, so we cooked
with propane. This Gozney features an
integrated thermometer in the oven body,
which we used when warming up the oven
to check against our measurements on the
pizza stone. We found it lagged about five
minutes behind temps we measured on the
pizza stone, but it was reasonably accurate
once the oven was hot. The outside body
of the Roccbox was a full 100 degrees
cooler than the other models, due to its
silicone covering. You can touch the green
