One of these successful
services is Provisioning, led
by the Provisioning Guru,
Colin Clark, a 3rd Generation
Scottish Butcher. He is the
responsible for taking care of
the most demanding chefs
onboard making his own
sausages and curing his own
bacon, and bringing beef and
lamb direct from source in
Ireland weekly. All fruit, veg
and fish is sourced from the
main wholesale market, to
ensure quality, freshness
and value.

“For it to be worthwhile you
have to have pride in your
work, use your knowledge and
experience, but at the same
time, always be open-minded
and hungry to learn more.
You always need to question
accepted truths and strive for
what’s best at that particular
moment in time. I put myself
in my client’s skin and feel
the need to produce quality
results, time after time, and
as well feel the frustration
when things don’t go exactly
as planned”, explains Colin,
who is aware of the need
to keep up with the client’s
requirements.

Colin is member of the
British Institute of Meat and
he is continuously updating
himself with new knowledge
and trends in the business of
Provisioning, especially meat.

Now he counts with several
years of expertise in the
yachting industry and he
is able to think like an
overwhelmed chef when
guests or owners are onboard.
“In the food game, everything
is a long chain, from origin all
the way through to the plate,
everybody’s got their part to
play, and you’ve got to be on
top of your game, day in &
day out, to make sure what
you do helps make that
chain a successful one”,
as Colin claims.

Evolution has fully staffed,
strategically located offices in
Palma, Barcelona, Tarragona
and Ibiza with satellite offices
throughout Spain to assist you
during your travels in Spain.

Their objective... They want
the crew to feel like they are
