SARANSH GOILA
Dum Biryani
INGREDIENTS
FOR CHICKEN
- 400 gms diced chicken
- 3 cups diced vegetables
- 2 tbsp garlic and ginger
- 4 sliced onions
- 2 tbsp fried onion
- 1/2 cup yogurt
- 1/2 cup chicken stock
- 60 gms mixed dry fruit
- 1 tbsp garam masala
- 1/4 tsp turmeric powder
- 2 tsp cumin powder
- 1 tsp chilli powder
- 2 tbsp green chillies
- mint leaves
- coriander leaves
- 1 tsp green cardamom
- 1 inch cinnamon
- 2 bay leaves
- 1 tsp white pepper
- salt to taste
- 4 tbsp olive oil
FOR RICE
- 1 ml rose water
- 2 tsp ghee
- 200 gms brown rice
- 2 pinches sa ron
- 3 tbsp fried onion
- mint leaves
- coriander leaves
- 1 tsp green cardamom
- 1 inch cinnamon stick
- 2 bay leaves
- 2 tsp shahi jeera
METHOD
- Marinate the chicken with
cumin, turmeric, chilli, garam
masala, salt and pepper.
Keep aside for two hours - Heat oil in a pan and add
cardamom, bay leaves,
cinnamon and onion. Sauté
till the onions turn brown
and then add the ginger
and garlic - Add the marinated chicken
and sauté till sealed. Add
the vegetables, dry fruits and
chicken stock and cook for
15 minutes. Sprinkle with
coriander and mint leaves - Half-cook the brown rice
separately in salt water
with cardamom, bay leaves,
cinnamon and shahi jeera - Now, take a heavy bottomed
pan with a lid. First, add all
the cooked chicken and then
top with the brown rice - Dilute sa ron in two
spoons of milk or water.
Add this and the rose water
on top of the rice. Sprinkle
with the brown onions,
coriander and mint - Cook on a low ame for
15 minutes. Let the biryani
cook in its own steam - Serve immediately with
papad, raita and pickle
When I tried my hand at
this biryani, to my surprise,
it came out very well. The
brown rice adds a unique and
healthy twist to it. The oil
content can be reduced if you
want to make it healthier
