After almost 20 years as one of Singapore’s leading French fine-
dining restaurants, Saint Pierre was recognised with a Michelin
star in the 2017 guide. Directed by chef and owner Emmanuel
Stroobant, the restaurant offers modern French cuisine with
Asian-inspired elements. The intimate venue ( just 24 covers) is
a high-end space with great views over Marina Bay. In June, the
restaurant introduced a new “Adventure” menu concept, which
features 26 courses alphabetised from
the chilled “Anchovy, shishito, tomato
water” to “Zesty chocolate, homegrown
rosemary”. Highlights included “Infusion
of lemongrass, artic char” – a fresh, tasty
dish with perfectly cooked fish and crispy
skin. The hint of lemongrass in the sauce
added an unexpected Thai twist that was
delicious. The “Organic seaweed, clams,
black cod” showcased seaweed in a
variety of textures and tastes.
Service throughout the meal was to a
very high standard: the waiters waited for
natural pauses in conversation and were
able to explain each dish with confidence.
VERDICTThe 26-course, bite-size menu
is a great way for guests to try a bounty
of signature dishes in one sitting. Even
though each dish is small, the attention to
detail is superb. I wouldn’t be surprised to
see this restaurant gain a second star in

Finding a classy
bar in Taipei can be
difficult if you’re not
an EDM fan (that’s
electronic dance music to the uninitiated), but new lounge and
bar KOR offers a sophisticated alternative. KOR’s interior features
1920s Art Deco lines with a classic black-and-gold colour scheme.
Plenty of private booths with table service are available, while cool
beats of hip hop, soul and funk encourage dance floor antics. The
drinks list is designed for an audience of discerning spirit lovers,
with an exceptional bourbon and whisky list that explores the
latest offerings from Japan and Taiwan. KOR’s cocktail menu is
also innovative with interesting Taiwanese influences. Take the Wu
Fashioned – featuring house-infused oolong tea bourbon as its
base – for an updated twist on a classic, or the Gao-lapeno, which
incorporates Taiwanese baijiu Gaoliang with jalapenos for a fiery
kick. Bubble tea, one of Taiwan’s most famous exports, is also given
a nod with the delicious HardKOR Boba Tea cocktail. Tamsin Cocks
Tiffin is one of nine F&B outlets at Grand
Hyatt Hong Kong. After a five-month
refurbishment, the restaurant reopened
in October with all-new soft furnishings,
new menu items and additional features.
One of the highlights of Tiffin is the live
music – at dinner, we enjoyed a smooth
jazz quartet. The buffet selection is
impressively large, ranging from fresh seafood to roast meats and
classic European dishes. New to the buffet is the freshly shucked
oyster selection (there are six kinds). Guests can also order lobster
à la carte, which comes boiled, grilled or Thermidor-style. For me,
the star of the buffet was the beef Wellington: the tender meat –
wrapped in soft filo pastry – was beautifully pink in the middle. For
those with a sweet tooth, the dessert counter does not disappoint.
VERDICTAn elegant setting, excellent food and convenient
location, particularly for those with business at the Hong Kong
