CLEAR MILK PUNCH
Don’t listen to the Dude: there’s more to dairy-
based cocktails than the White Russian. Clear milk
punch is a 300-year-old concoction that uses acid
to separate milk’s proteins from its solids, resulting
in a vibrant, clear drink with a silken mouthfeel.
For best results, squeeze your own juice and use
unhomogenised cow’s milk. You can also add ground
spices (cloves and coriander seeds work well), or
swap the vodka for a mix of rums and bourbon.
Method: In a large jug, combine 3 cups brewed black
tea, 3 cups lemon juice, 3 cups orange/pineapple
juice, 1 cup simple syrup (equal parts water and
sugar) and 1 cup vodka. In a medium saucepan, bring
3 cups milk to a light simmer, and immediately pour
into the jug. Don’t worry when the milk curdles – this
is the alchemy we’re after. Cover and chill for at least
1 hour or up to 24. Strain mixture into a large bowl
through a sieve lined with a cheesecloth. Strain again
if needed, then ladle into chilled, ice-fi lled glasses. SJ
