CAMPFIRE BRIE FONDUE
IN A BOX
PREP + COOK TIME 20 MINUTES SERVES 4

200g wheel of brie in a wooden box
1 clove garlic
1 teaspoon olive oil
1 sprig fresh thyme
sprig of fresh bay leaves

1 Prepare a fire to glowing coals.
2 Open brie box; remove plastic
lining wrapper. Line base and side
of box with baking paper, extending
paper 1cm above the side. Return
brietobox.Scoresurfaceofbrie
ina criss−crosspatternat2cm
intervals,1cmdeep.
3 Halvegarlicclove;pushinto
cheese.Pouroiloverbrie;season.
Wetthymeand bayleaves;place
oncheese.
4 Placecheeseina campoven,
cover;place20cmabovecoals;top
lidwithcoals.Cookcheesefor
15 minutesoruntilmelted.

SELF-SAUCING PUDDING
PREP + COOK TIME 1 HOUR SERVES 8


1⅔ cups (370g) firmly packed
brown sugar
1½ cups (225g) self−raising flour
⅓ cup (40g) malted milk powder
or Milo
⅓ cup (35g) cocoa powder
¾ cup (180ml) milk
⅓ cup (80ml) vegetable oil
1 egg
1 cup (120g) chocolate−coated malt
balls (optional)
3 cups(750ml)boilingwater


1 Preparea fireto glowingcoals.
2 Combine1 cup(220g)ofthe
sugar,theflour,milkpowderand
2 tablespoonsofthecocoain
a mediumcampoven;whiskto
combineandremoveanylumps.
Whiskinmilk,oilandegguntil
combined,thenstirinmaltballs,
if using.Spreadmixtureevenly
overbaseofoven.
3 Sprinkletheremainingsugar
andcocoaoversurfaceofpudding;
pourboilingwaterovertheback
ofa spoonevenlyovermixture.
4 Covercampovenwithlid.Elevate
5cmovercoals.Placehotcoals on
lid.Cookpuddingfor 30 minutesor
untilcentreisfirm,checkingafter
15 minutesandreplacinghotcoals
onlidif needed.Removefromheat.
