TOP TIPS
Two steps are
necessary before you
can cook mussels:
scrubbing and
bearding. Firstly,
discard any mussels
already open and those
with cracked shells.
Scrub the shells with
astrongscourerto
remove any debris that
is attached. Wash the
mussels under plenty
of cold water. Look
between the mussel
shells and you will see
the rope−like, tough,
fibrous beard. To
remove it, pull down
firmly and jerk it away
from the shell.
