My slimdown stats...


and even my 30th birthday, and I was amazed
at how much my confidence grew with every
success on the scales. I’d always put on a front
at social occasions and felt self-conscious that
people might judge my big appetite. Now I felt
secure about eating in front of people – loving
my food was helping me slim! I started walking
George to and from school and, as my energy
increased, I even built my way up to running
a 5K Race for Life for charity!
Eleven months after making
our pact, I reached my target
weight. We booked our dream
getaway and, in March 2017,
I stepped onto the Brooklyn Bridge
in New York, with a very proud
Tim clasping my hand. Since
challenging myself to lose 5st
I’ve become a different person –
happy, confident, full of energy
and with a new job as a Slimming
World Consultant – and I can’t
wait to see what I can do next.

SOUTHERNSTYLE SPICED CHICKEN
Home-made breaded chicken goes down a treat with the boys...
Serves 
Ready in about  minutes

Preheat your oven to °Cfan °Cgas and line a baking tray
with baking paper. In a large bowl, mix together g tomato purée,
 tsp each of garlic salt and cayenne pepper, and  tbsp dried mixed
herbs, and season with black pepper. Whisk  egg white in a clean glass
bowl until sti­ peaks form, then fold into the tomato purée mixture.
Tear a ‚g wholemeal roll into pieces and whizz into „ ne crumbs in a
food processor. Transfer to a plate. Dip  skinless and boneless chicken
thighs into the egg mixture, then roll in the breadcrumbs to coat evenly.
Arrange on the baking tray in a single layer and spray with low-calorie
cooking spray. Bake for -‰ minutes, or until cooked through. Divide
between Š dishes and serve with lemon wedges for squeezing over.
