EVERYDAY EASY
Serves 
Ready in about  hour  minutes

g floury potatoes, such as
Maris Piper, cut into small cubes
Low-calorie cooking spray
 g back bacon rashers, visible fat
removed, roughly chopped
 frozen Slimming World Syn-free
Pork Sausages, defrosted and halved
 large onion, finely chopped
 carrot, peeled and finely chopped
 small fennel bulb, cored and
finely chopped
  g can butter beans, drained
and rinsed
  g can chopped tomatoes
 ml hot chicken stock
­ tbsp tomato purée
Chopped fresh chives, to serve

 Preheat your oven to °C
fan
°Cgas . Boil the potatoes
for - minutes until slightly
softened, then drain well and set
aside. Meanwhile, spray a large,
flameproof casserole dish with
low-calorie cooking spray and
place over a medium-high heat. Add
the bacon and sausages and cook
for € minutes until lightly browned.
 Add the onion, carrot and fennel
and cook gently for € minutes, or
until the vegetables start to soften.
 Add the butter beans, tomatoes
and stock and bring to the boil. Add
the tomato purée, stir well and
simmer for € minutes. Season and
top with the potato cubes. Spray
with low-calorie cooking spray and
bake for „€-… minutes, or until the
potatoes are crisp and golden and
the filling is thickened and bubbling.
Sprinkle over the chives to serve.
