Serves
Ready in about hour minutes
g floury potatoes, such as
Maris Piper, cut into small cubes
Low-calorie cooking spray
g back bacon rashers, visible fat
removed, roughly chopped
frozen Slimming World Syn-free
Pork Sausages, defrosted and halved
large onion, finely chopped
carrot, peeled and finely chopped
small fennel bulb, cored and
finely chopped
g can butter beans, drained
and rinsed
g can chopped tomatoes
ml hot chicken stock
tbsp tomato purée
Chopped fresh chives, to serve
Preheat your oven to °C
fan
°Cgas . Boil the potatoes
for - minutes until slightly
softened, then drain well and set
aside. Meanwhile, spray a large,
flameproof casserole dish with
low-calorie cooking spray and
place over a medium-high heat. Add
the bacon and sausages and cook
for minutes until lightly browned.
Add the onion, carrot and fennel
and cook gently for minutes, or
until the vegetables start to soften.
Add the butter beans, tomatoes
and stock and bring to the boil. Add
the tomato purée, stir well and
simmer for minutes. Season and
top with the potato cubes. Spray
with low-calorie cooking spray and
bake for -
minutes, or until the
potatoes are crisp and golden and
the filling is thickened and bubbling.
Sprinkle over the chives to serve.
