Swede & mustard mash-topped cottage pie
Ready to heat straight from the freezer, this hearty dish won’t let you (or your weight loss) down

EVERYDAY EASY
Serves 

Ready in about  hour  minutes,
plus cooling

Low-calorie cooking spray
 onion, finely chopped
 carrots, peeled and finely chopped
 celery sticks, finely chopped
 ­­g lean beef mince ( ‚ fat or less)
 x  g cans baked beans
tbsp tomato purée
„ tbsp Worcestershire sauce
 tbsp dried mixed herbs
½ cabbage, shredded
Finely chopped fresh flat-leaf
parsley, to serve
For the topping:
ˆ­­g swede, peeled and cut
into small cubes

 ­ml vegetable stock
 tsp mustard powder
 large egg, beaten

 For the topping, boil the swede in
a large saucepan for
- minutes,
or until just tender. Drain and return
to the pan. Add the stock, sieve in
the mustard powder, then mash until
smooth. Leave to cool, then stir in
the beaten egg, season and set aside.
 Spray a large, non-stick frying pan
with low-calorie cooking spray and
place over a medium-high heat. Add
the onion, carrots, celery and mince
and stir-fry for -
 minutes. Stir
in the baked beans, tomato purée,
Worcestershire sauce and dried
mixed herbs, and season. Simmer
gently for
- minutes, or until

thickened. Transfer to a medium,
deep pie dish.
 If you’re not freezing this dish,
preheat your oven to °Cˆfan
°Cˆgas ‰. Spoon the mash over
the mince and rough up with a fork.
Bake for ‹-‹ minutes, or until the
top is golden and bubbling.
 Meanwhile, boil the cabbage
for Ž- minutes, then drain. Remove
the cottage pie from the oven,
scatter over the parsley and
serve with the cabbage.

The pie is ready
to freeze once
you’ve roughed up
the mash. Leave
the pie to cool
completely, cover
tightly with cling
film and freeze. To
bake from frozen,
discard the cling
film and cover with
foil. Bake at ‚ƒºC…
fan †ƒºC…gas ‡
for  hour, then
increase the heat
to ˆƒƒºC…fan
‚ƒºC…gas †,
remove the foil and
bake for a further
ˆƒ-ƒ minutes,
or until piping hot
in the centre
