Preheat your oven to °Cfan

. Put skinless and boneless chicken
thighs in a mixing bowl with quartered
red onions, deseeded and roughly
chopped peppers and cubed courgettes.
Sprinkle over tbsp dried harissa spice
mix and the juice of lemons and toss to
coat. Tip into a large, non-stick roasting tin
and bake for - minutes, or until the
chicken is cooked through. Season and
add fresh coriander leaves.

Salmon, asparagus
& cherry tomato
SUPER SIMPLE
Serves Ready in about hour
Preheat your oven to °Cfan
°Cgas
. Mix g halved Charlotte potatoes,
unpeeled garlic cloves and ml hot
vegetable stock in a large, non-stick
roasting tin. Bake for minutes. Stir in
g whole cherry tomatoes and g
fine asparagus. Top with skinless and
boneless salmon fillets and bake for
-
minutes, or until the salmon is cooked
through. Season and add fresh dill sprigs.

Veggie sausage &
sweet potato
SUPER SIMPLE V
Serves Ready in about hour
Preheat your oven to °Cfan
°Cgas
. Mix cubed sweet potatoes, cubed
aubergines and halved echalion shallots
(or
regular shallots) in a large, non-stick
roasting tin. Mix ml hot veg stock with
g passata and pour over. Bake for
minutes. Stir through a drained g can
chickpeas, halved frozen Quorn Low-Fat
Sausages and ml hot veg stock if it’s
looking dry. Bake for minutes. Season
and add chopped fresh flat-leaf parsley.
Syns per serving: FREE
