Using ready-sliced veg makes this veggie dinner for four a doddle...
Spray a cm non-stick frying pan with low-calorie
cooking spray and fry g frozen sliced red onions for
- minutes. Set aside in a bowl. Reuse the pan to fry
g ready-sliced mushrooms until golden. Mix with
the onions in the bowl, then return three quarters to the
pan. Pour over beaten eggs, season and cook over a low heat for
minutes. Place under a hot grill for a further minutes, or until set.
Spread over tbsp passata with herbs, scatter over the remaining veg
and evenly tear over g reduced-fat mozzarella. Grill for - minutes,
then divide between plates.
