Chicken
sausages &
cauliflower-
bean mash

EVERYDAY EASY
Serves 
Ready in about  minutes
Low-calorie cooking spray
 Heck Chicken Italia
chipolata sausages
 onion, sliced
 large tomatoes, diced
 tbsp chopped fresh thyme leaves,
plus extra sprigs to serve
ml hot chicken or vegetable stock
g cauliflower florets
g can cannellini beans,
drained and rinsed
Finely grated zest of
½ unwaxed lemon
 level tsp Dijon mustard

 Spray a large, non-stick frying
pan with low-calorie cooking
spray and place over a medium-
high heat. Add the sausages
and cook for  minutes until
golden-brown. Transfer to a
plate and set aside.
 Add the onion to the pan and
cook for - minutes. Add the
tomatoes and cook for a further
 minutes. Add the chopped
thyme and stock, season with
freshly ground black pepper and
bring to the boil. Return the
sausages to the pan, reduce the
heat and simmer for  minutes, or
until the sauce has reduced and
the sausages are cooked through.
 Meanwhile, boil the cauliflower
for  minutes, then add the
cannellini beans and cook for
a further  minutes. Drain well,
then return to the pan with the
lemon zest and mustard. Season
with freshly ground black pepper
and mash until smooth. Divide
the mash, sausages and sauce
between  plates. Scatter over
the thyme sprigs and serve.
