APPLE, THYME &
VANILLA NON-
ALCOHOLIC DRINK
SERVES 4
- 5g fresh mint leaves
- juice of 2 limes
- pinch of stevia powder
- seeds from 1 vanilla pod
- 1 red apple, finely
sliced - 1L coconut water,
chilled - 2g fresh thyme sprigs
- Place a mint leaf into
each hollow of an ice tray,
fill the tray with water and
freeze it. - Stir to combine the lime
juice, stevia and vanilla
seeds in a large jug, then
add the apple slices and
frozen mint ice cubes. Add
the chilled coconut water
and stir again to combine. - To serve: Garnish the
jug with fresh thyme, then
pour the drink into glasses
and serve immediately. Q
