TUNA & CHICKPEA SALAD WITH
ORANGE & CUMIN DRESSING

SERVES 2 PREP 10 mins70g baby spinach leaves
100g cherry tomatoes, sliced
1 small Lebanese cucumber, julienned or sliced
½ red capsicum, thinly sliced
1 carrot, julienned or sliced
125g can chickpeas, rinsed, drained
185g can tuna in springwater, drained, flaked
1 tbs orange juice
2 tsp olive oil
½ tsp ground cumin
1 tsp red wine vinegar
2 tbs Weight Watchers Cottage Cheese1 Combine spinach, tomatoes, cucumber, capsicum,
carrot, chickpeas and tuna in a large bowl.
2 Whisk orange juice, oil, cumin and vinegar in a small
bowl. Add dressing to salad and toss to combine.
