King Prawn Open Sandwich


Inspired by Swedish prawn open sandwiches
or Räksmörgås, this recipe is ideal for a light
meal that requires no cooking and can be put
together in a few minutes.

INGREDIENTS



  • 150g (5½oz) cooked king prawns

  • juice of 2 lemons

  • 4 tbsp chopped fresh dill

  • 2 tbsp chopped red onions

  • 1 avocado

  • 2 large slices of rye bread

  • a handful of rocket

  • pinch of salt and pepper, to taste

    • a drizzle of hot chilli sauce, such as Sriracha
      (optional)

    • dill, cucumber and lemon wedges, to
      decorate




SERVES: 2
PREP TIME: 15 MINUTES
COOKING TIME: 2 MINUTES (FOR TOAST)


  1. Add the cooked prawns to a bowl along
    with the juice of 1 lemon, chopped dill,
    chopped onions and a pinch of salt
    and pepper.
    2. Scoop out the avocado fl esh into another
    bowl. Add the juice of the second lemon and
    season with salt and pepper. Mash with the
    back of a fork until smooth. Add an optional
    drizzle of hot chilli sauce to add a bit of heat.
    3. Toast the 2 slices of bread, spread with
    a layer of the mashed avocado, then top
    with rocket and half the prawn mixture.
    Decorate with more dill, cucumber ribbons
    and lemon wedges.
