Tandoori Salmon with Quinoa
This salmon dish inspired by Indian fl avours
is deliciously aromatic without being too
spicy. Serve with a simple quinoa dish,
making it perfect as a healthy packed lunch
or a quick and easy weeknight dinner.
INGREDIENTS
- 3 tbsp low-fat or soya yoghurt
- 3 tbsp tandoori masala spice mix
- juice of ½ lemon
- ¼ tsp chilli powder
- 1 tbsp fresh ginger, grated
- 1 garlic clove, crushed
- 2 salmon fi llets (approximately
260g/9oz), cubed - 80g (½ cup) quinoa
- 220ml (scant 1 cup) low-salt vegetable stock
- 1 red pepper, chopped
- 1 yellow pepper, chopped
- ½ red onion, chopped
- 4 tbsp chopped cucumber
- juice of 1 lemon
- handful of fresh parsley and rocket,
to decorate

PREP TIME: 30 MINUTES (PLUS 10
MINUTES TO MARINATE)
COOKING TIME: 15 MINUTES
- In a large bowl, mix together the yoghurt,
tandoori masala, lemon juice, ginger and
garlic. - Coat the salmon cubes in the tandoori
mixture and leave to marinate for 10 minutes. - In the meantime, prepare the quinoa
by adding it to a saucepan along with the
vegetable stock. Bring to a boil, cover, then
lower the heat. Leave it to simmer for around
15 minutes or until all the stock is absorbed.
4. Preheat the oven to 220°C (200°C fan),
425°F, Gas Mark 7. Arrange the salmon
cubes on a baking sheet covered with
parchment paper and bake for about
10–13 minutes.
5. Transfer the quinoa into a bowl, then mix
in the chopped peppers, onion, cucumber
and lemon juice. Serve the tandoori salmon
with the quinoa dish, decorated with
parsley and a few rocket leaves.
QUICK TIP
The longer you leave the salmon to
marinate, the more fl avoursome the
end result will be.
