JERUSALEM ARTICHOKES


Caulifl ower & Jerusalem


Artichoke Soup


INGREDIENTS



  • 1 onion

  • 2 ribs of celery

  • 2 cloves of garlic

  • ½ tbsp light olive oil

  • 500g (1lb 2oz) Jerusalem artichokes

  • 1 head of caulifl ower

  • 1 litre (4¼ cups) low-sodium vegetable stock

  • freshly chopped herbs, to garnish


SERVES: 4
PREP TIME: 10 MINUTES
COOKING TIME: 30 MINUTES


  1. Finely chop the onion, celery and garlic and
    add to a large soup pan with the light olive oil
    over a medium heat. Lightly fry for 5 minutes.

  2. Peel the artichokes and chop into small
    pieces and roughly chop the caulifl ower. Add
    both to the pan along with the vegetable stock.

  3. Cover the pan and simmer for 20 minutes or
    until the artichokes are tender.

  4. Blend the soup until it’s velvety smooth and
    season to taste before serving, garnished with
    herbs.
