GRILLED SCALLOPS IN THE SHELL
Prep: 5 mins. Cooking: 10 mins. Serves 6.
Heat a grill pan or barbecue to high heat. Melt 150g unsalted butter
(coarsely chopped) in a small saucepan over medium heat; add 3 finely
chopped green onions and sauté until fragrant, 5mins. Spoon butter
sauce over 18 scallops in the shell, season to taste, scatter with ¼ cup
finely chopped coriander and grill, scallop-side up, until plump and just
cooked through, about 5mins. Serve hot with lemon wedges on the side.
